cup Fiber One™ Cereal

1/2

teaspoon Cajun seasoning

1/2

teaspoon onion powder

1/2

teaspoon garlic powder

    Preheat oven to BROIL and line a cookie sheet with aluminum foil. Spray aluminum foil with cooking spray.

    Place Fiber One™ in a food processor or blender and process until fine crumbs. Add Parmesan cheese, Cajun seasoning, onion powder, garlic powder, and Italian seasonings and pulse once more.

    Coat tilapia in egg white and then coat in crumbs. Place on prepared cookie sheet and spray top of tilapia with cooking spray.

    Broil for 3-4 minutes then turn fillets over and broil for another 3-4 minutes or until done.

    Squeeze one lemon slice over each fillet and enjoy.

    Just throw some Fiber One cereal and seasonings into a food processor or blender and process the cereal until fine. My family had no idea that it wasn’t just regular breadcrumbs. Coat the tilapia in the crumbs then broil for a couple of minutes on each side.

    Squeeze some lemon on the cooked fillets and you have a healthy meal in under 20 minutes.

Ideas for Serving Parmesan Tilapia

I like to serve this crusted tilapia with a side of low-carb pasta or even a variety of the newer kinds of veggie and legume pasta there are available right now (the one made out of chickpeas is delicious!).

Tilapia goes great with roasted veggies like green beans, Brussels sprouts, broccoli, cauliflower, or a mixture of veggies.

I also think a baked sweet or Russet potato really rounds out a meal made with tilapia and a veggie. Top with Greek yogurt and spices for a low-calorie potato topping if you're worried about having too much butter.

Put tilapia in a high-fiber wrap with roasted veggies and some hummus for a delicious, nutritious fish sandwich option that's baked, not fried.

Also, rice works great with this cheesy-topped tilapia too. White, brown, or cauliflower, whatever you prefer. Another option is to try the steam-in-a-bag pouches of rice. Be careful though not to get too big a portion, those bags hold more than you think!

Garlicky Lemon Baked Tilapia

Baked tilapia is a weeknight dinner dream. The fish, which has a very mild fish taste, is a great way to get those non-fish eaters to love it. It cooks quickly and takes on flavors well. We cooked ours in plenty of butter, lemon, and garlic to make it bright and fresh and easy to love. Baking it requires very little effort with zero risk of the fish sticking to your skillet or grill.   1. Preheat oven to 400°. Season tilapia with salt and pepper and place on a small baking sheet.
  2. Mix together butter, garlic, red pepper flakes, lemon juice, and zest then pour over tilapia. Place lemon rounds on top and around tilapia.
  3. Bake tilapia for 10 to 12 minutes or until fish is fork-tender.

Add the mushrooms, capers, and wine. Cover, reduce heat, and simmer until the fish flakes easily with a fork and the wine is reduced by half, 6 to 7 minutes. Remove the cover, pour in lemon juice, and cook for one minute.

Cook time: 4-7 min

Ingredients

1 teaspoon salt
1 teaspoon black pepper, freshly ground
1/2 teaspoon cayenne pepper
1 1/2 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon oregano
1 1/2 pounds tilapia, thawed
1 lime, quartered

Instructions

Place oven rack as close to the broiler as possible and heat broiler to high. Cover baking sheet with aluminum foil and spray on non-stick spray. Mix salt, black pepper, cayenne pepper, cumin, garlic powder, and oregano in a small bowl. Rub tilapia fillets on both sides with the spice mixture and put on pan spaced evenly apart.

Broil for 4-7 minutes until a butter knife is easily inserted into the thickest part of the fish. It should be flaky. Serve with the lime to squeeze on right before eating.

This looks wonderful and I like the spices you included in the recipe. Looks like they would work with any white fish (flounder, cod, etc.) I buy frozen fish from Costco, too, to have on hand for busy weeknights. When I buy fresh, I now have a go-to recipe. Thank you!

Ingredients

• 2 large zucchini (about 1-1/2 pounds)
• 1-1/2 teaspoons ground cumin
• 3/4 teaspoon salt, divided
• 1/2 teaspoon smoked paprika
• 1/2 teaspoon pepper
• 1/4 tsp garlic powder
• 4 tilapia fillets (6 ounces each)
• 2 teaspoons olive oil
• 2 garlic cloves, minced
• 1 cup pico de gallo

Directions

1. Trim ends of zucchini. Using a spiralizer, cut zucchini into thin strands.

2. Mix cumin, 1/2 teaspoon salt, smoked paprika, pepper and garlic powder sprinkle generously onto both sides of tilapia.

3. In a large nonstick skillet, heat oil over medium-high heat. In batches, cook tilapia until fish just begins to flake easily with a fork, 2-3 minutes per side. Remove from pan keep warm.

4. In same pan, cook zucchini with garlic over medium-high heat until slightly softened, 1-2 minutes, tossing constantly with tongs (do not overcook).

5. Sprinkle with remaining salt.

6. Serve with tilapia and pico de gallo.
Note: If a spiralizer is not available, zucchini may also be cut into ribbons using a vegetable peeler. Sauté as directed, increasing time as necessary.
