How to make zuccotto di ziti with pumpkin

Clean and chop the onion, then brown it in a pan with the bacon and a drizzle of oil.

Add the diced pumpkin, cook for a couple of minutes, then cover with hot broth and cook (about 15-20 minutes).

Blend with the blender, then season with salt and pepper, add the Parmesan and mix.

Cook the pasta in a large pot with plenty of salted water, drain it al dente.

Generously grease the mold and sprinkle with breadcrumbs, then start lining the walls with the dough, starting from the bottom: dip each zito in the pumpkin cream, place it on the surface of the mold and wrap it on itself, creating a single spiral.

Break up the remaining pasta and add it to the remaining cream, adding the diced provolone.
