Chicken salad with zucchini

Wash the chicken breast and cut into slices. Season with salt and pepper and put in a frying pan. (Do not fry too hard to keep from drying out).

Peel a squash, grate it and slice it. Salt to taste and fry in hot oil. As they are fried, take them out on a plate.

The fried chicken breast is cut into sticks. The same is done with chicken breast.

Put in a large bowl and add over a mixture of mayonnaise and sour cream (half mayonnaise, half sour cream).

Season with salt and pepper, if necessary.

Today we offer you a recipe for meatballs with chicken and zucchini, fluffy and airy, delicious for any meal and suitable even for a plate with appetizers.

  • 500 g chicken
  • 1 or
  • 2 cloves of garlic
  • 2 tablespoons flour
  • 1 large zucchini
  • 50 g race parmesan
  • salt
  • pepper
  • dill
  • thyme
  • crust for crust
  • frying oil

Put the meat on the mincer or chop it with a food processor. Peel a squash, grate it and squeeze the juice. Put a little salt on it to remove the water.

After the zucchini has been left for 10 minutes, drain it well of water. Mix in a bowl: minced meat, grated zucchini, egg, crushed garlic, parmesan, salt, pepper, thyme, chopped dill and flour to bind the composition.

Refrigerate for half an hour, after which you can form the meatballs with a wet hand. You can give them flour or breadcrumbs or cook like this, without crust. Heat oil in a pan or grease a baking sheet with a little oil, if you choose to bake them.

Fry the meatballs in an oil bath or place them on the baking paper and bake until golden brown, taking care to turn them from time to time. Serve with your favorite salad, garnish or sauce. Good appetite!

Chicken meatballs with zucchini simple recipe

Chicken meatballs with zucchini simple, cheap recipe. The tender and spicy chicken meatballs, with reddish and golden crust. They can be baked in the oven or fried in a pan. The grated zucchini in the composition make them juicy and soft, especially since the chicken is a lean meat that needs to be helped a bit.

For the first time I saw these chicken meatballs with zucchini Laura Laurentiu (retetecalamama.ro) in an article published in 2014. She herself was delighted with the recipe she had just improvised and the result was very nice. In general, people know about Moldovan parjoals (recipe here) which include in the composition grated potatoes, carrots. Not much has been said about meatballs with meat and zucchini. I'm not saying they weren't made until then, but they certainly weren't that popular.

I really like one too courgettes but also meatballs, especially pork, as their mother does.

I started from Laura Laurentiu's idea but I slightly modified the recipe along the way, in my style. I added some elements that lead her in Mediterranean area: a little garlic, parmesan, green basil, mint and a few slices of grated lemon peel. Very good and fragrant came out! Of course you can season them with your favorite spices (or that you are used to): thyme, cumin, etc.

Zucchini can be the classic ones but also zucchini. Know that zucchini are creamier, less watery.

For these chicken meatballs I recommend using boned legs, not the chest which is too weak and dry. It would be good if you could grind your meat, not buy minced meat. From the ingredients below we obtained 26 chicken meatballs with zucchini. I also told you in the introduction that they are spongy because grated zucchini almost doubles the composition of meatballs.


Chicken salad with vegetables and yogurt

Boil water in a pot. Add the chicken breast and let it boil until it boils. Drain the water, add fresh water, boil and breast again.

Clean and wash the vegetables. The potatoes are boiled separately, the peas are roasted for a few minutes.

The rest of the vegetables are boiled over the meat. Let it boil well. When they are all cooked, take them out of the water and soup and let them cool well. Discard the onion, cut the rest of the cooked vegetables into suitable cubes.

Cut the chicken breast into cubes. Cucumbers are cut in the same way. Mix all the vegetables and meat in a larger bowl. Match the taste with salt and pepper.

Separately mix the yogurt with a little mustard and a pinch of salt. Add over the salad and mix gently. Let cool until ready to serve. It is very tasty, light and refreshing, it can be served with toast spread with a little garlic.

You can juggle the quantities or the ingredients, according to everyone's taste.


Chicken breast meatballs and zucchini

Chicken breast and zucchini meatballs are perfect to be served for lunch, along with a potato garnish or a salad of vegetables. Chicken breast, rich in protein and low in fat, acquires a special taste in combination with a little zucchini and carrot. Cook chicken and zucchini meatballs for your little one too!


Chicken legs in pumpkin sauce

A recipe that caught our family very well considering that I have two men for whom zucchini is only eaten breaded. I don't want to praise it but know that it is delicious even if it is with zucchini (or maybe because it is with zucchini :))

It is prepared with chicken but I say it works with weaker pork like cutlet. And it goes great with a polenta. If a glass of wine. I'm ready to write the recipe :)

Ingredients 3 servings (that's how it turned out):

  • 3 whole chicken legs or 6 lower legs
  • 50g butter
  • 1 large onion
  • 500g zucchini
  • 1 large carrot
  • 100ml tomato juice
  • salt pepper
  • 2 tablespoons chopped green parsley

1. Season the chicken legs and then fry in butter until golden brown on all sides. Take them out and put them in the tray in which we are going to prepare them in the oven.

2. While the thighs are browning, finely chop the onion, put the carrot and zucchini on a large grater. In the fat in which the thighs were fried, put the onion, heat it a little then add the carrots, leave for 1 minute and add the zucchini. From here it will seem like a disaster, the pumpkins will leave a lot of water but don't be afraid they will evaporate in the oven. Leave for 5 minutes then season and add the tomato juice.

3. Pour the vegetable mixture over the chicken, cover the pan with foil and put it in the hot oven at 180g for 30 minutes.

Then we take the foil and leave it until the liquid decreases and the food acquires a beautiful color.

4. Serve hot with polenta or mashed potatoes.

Handsome salad with chicken breast

METHOD OF PREPARATION:
1.Prepare all the necessary ingredients. Boil the carrot and chicken breast until ready. Boil the eggs for 7-9 minutes to harden.

2.Put the cheese, carrot and boiled eggs through the small grater.

3.Cut the chicken breast into cubes or break it into bundles - according to your own taste.

4. Start assembling the salad: put a kitchen ring in the middle of a flat plate. Place a layer of eggs around the ring and cover it with a grid of mayonnaise.

5. Then place the layer of minced meat and cover it with a grid of mayonnaise.

6. The next layer - the carrot.

7. Then - grated cheese, covering it with a lot of mayonnaise.

8. Decorate the salad with thin slices of kiwi and canned corn kernels (as in the picture below).

You will get a very attractive and festive salad! Enjoy it with great pleasure!


Chicken salad with potatoes

I had a roasted chicken with only the breast left, so I thought of making a salad.

  • 1 chicken breast
  • 5-6 potatoes
  • 1/2 capsicum or donut
  • 150g mushrooms
  • 3 tablespoons canned corn
  • 4 tablespoons mayonnaise to which I added 1 tablespoon sour cream and a clove of chopped garlic

If you have it fresh, fry it on the grill and then cut it into strips. Boil the potatoes, peel them and then cut them into cubes. We cut the pepper into cubes, we cut the mushrooms into slices and we harden them in a little butter. Put the chopped potatoes, the chicken breast, the pepper, the canned corn and the mushrooms in a bowl. Add mayonnaise (you can replace it with a fatter yogurt). Season with salt and pepper and mix lightly.

Serve garnished with a slice of pepper.

We have prepared an article with 3 recipes for chicken salad, because after any busy period, such as the winter holidays, we want to eat healthier and easier.

Chicken breast is the essential ingredient in the following recipes. It must be present even in weight loss recipes, being one of the most nutritious foods. It has a high content of protein and vitamins, being one of the most used ingredients in diets for weight loss or those of athletes.

In order to be used in salads, chicken breast can be fried, baked or boiled. Season well and add it to the following salad combinations.

Rebellious salad with chicken and avocado

  • Chicken breast (roasted, baked, boiled)
  • Lettuce
  • Coptic avocado
  • Canned corn / baked corn
  • Cherry tomatoes
  • Red onion

After the chicken breast is cooked, leave it to cool and prepare the salad in a large bowl.

Break the salad leaves and put them in the bowl. Finely chop the onion, avocado and tomatoes in half.
