Iri plum jam roll

Make a yeast mayonnaise, 2 teaspoons of sugar, a cup of warm water and 3 tablespoons of flour. Allow to rise until it doubles in volume, then add over the flour together with the milk, egg, a tablespoon of sugar and oil.

Knead an easy-to-shape dough that is left to rise.

After it has risen, it is divided into two (two rolls come out of this dough). Spread some of the dough, grease with jam and roll. It is placed in a tray lined with baking paper, then we make the other roll and place it in the tray (I made it in the stove tray and they both took place). When the oven heats up, let it rise, then put in the oven for about 40 minutes.

Fresh croissants with jam or magiun. A recipe for simple and quick tender croissants, with generous, vanilla and flavorful filling. They simply melt in your mouth! They can be filled with jam, magiun, jam mixed with walnuts, shit, poppy seeds, coconut or chestnuts.

I have long wanted a recipe for perfect tender cornlets, to which I spread the dough very thin and then roll it over the filling, and I will obviously pass the croissants through vanilla powdered sugar. I didn't want any rubbery or too hard dough, I wanted to be able to break the croissants between two fingers.

So I set to work and experimented with this recipe, combining the ingredients until I reached the desired consistency. So, here you will see the result of my & # 8222research & # 8221. Obviously, being tender croissants, do not contain yeast, because I don't want a fluffy dough but a crumbly one and it doesn't knead much, just mix it until the ingredients are incorporated, because otherwise we risk the formation of a gluten network and we get a rubberized dough.

My dough is so fragile that, after baking, it makes & # 8222crontz & # 8221 and broke in a split second. It is exactly the consistency of the dough that I was looking for and that I share with you.

Recently I participated in a special event, together with our friends from the Integra Association, entitled "Art as a puzzle". Among other things, the paintings made by children and adults with Down syndrome from the Integra association were exhibited, under the careful guidance of Mrs. Ondina Turturica.

Because I really liked these paintings, I chose three to include in our recipes as a background. Thank you Integra for this opportunity!

From the quantities below we get about 30 croissants (about 2 trays). Butter can be used instead of butter (in smaller quantities).

Roll with orange jam and dried fruit

For the filling: 150 g of raisins, 50 g of prunes, cut into large pieces, 50 g of dried apricots, cut into large pieces, 170 ml of rum, 80 g of butter, 100 g of a mixture of nuts, almonds and hazelnuts, 200 g of orange jam.

For the dough: 500 g flour, 15 g baking powder, 200 g soft butter, 150 g sugar, a teaspoon of lemon peel, vanilla bean seeds, 3 eggs, 4 tablespoons milk.

Method of preparation:

Preheat the oven to 180 degrees Celsius and line a baking tray with parchment paper. We hydrate raisins, plums and apricots in rum. Mix the flour with the baking powder and beat the butter with the sugar until they become a foam. Add the lemon peel, vanilla seeds and eggs and incorporate. Add the flour mixture with baking powder in the rain and mix well. Add the milk and knead until it becomes a soft dough. Drain the dried fruit and melt the butter in a pot. Mix the melted butter with the nutmeg, the fruit and 20 ml of rum. On a surface lined with flour we spread the dough in a long and thin shape. Spread the orange jam on top, sprinkle the fruit and the nut mixture. Fold the dough wide so as to obtain a closed circle at the ends in the form of a roll. Put it on the baking paper and put it in the oven for 40-45 minutes, then take it out and leave it to cool. Sift the powdered sugar on top and serve. Good appetite!

  • 4 eggs, (if you use commercially, choose organic eggs or with the first digit inscribed 0 or 1)
  • 4 tablespoons wholemeal flour
  • 4 tablespoons brown sugar, or jam for filling (natural ones are made, homemade, without added sugar, such as: plum jam, natural strawberry jam, chia seed jam)

Steps needed to prepare

  1. Separate the egg whites from the yolks.
  2. The yolks are left whole.
  3. Beat the egg whites with the mixer until they become hard foam.
  4. Gradually add the sugar and continue mixing with the mixer, preferably until the sugar crystals are no longer felt.
  5. Then add the yolks. Incorporate the flour and flour into the composition and mix with a wooden spoon.
  6. This composition is then poured into the tray in which I put the baking paper, and it is slightly uniform with the wooden spoon.
  7. Place in the preheated oven at 180 degrees for no more than 7-10 minutes.
  8. If it bakes too much, & icircn instead of the goodness of the roll we will have to settle for a goodness of the cake :).
  9. It is then removed from the tray, together with the baking paper, on a wooden bottom.
  10. Place a damp and well-squeezed towel over the "uncovered" part, then turn it over.
  11. It is easy to give up the baking paper and roll it with a towel.
  12. Leave to cool for a few minutes, then unwrap and grease with the chosen filling.
  13. A final run and the roll is ready!

It keeps very well in cold food foil. Optionally, before being wrapped in foil, the roll can be sprinkled with coconut grater and, for a good adhesion of it, grease it beforehand with a little honey.

Vanilla Cream Roll - Preparation

For the top, beat the egg whites hard with a pinch of salt, add the yolks rubbed separately with the sugar, add the vanilla essence, the flour "in the rain" and mix gently until
homogenize. Pour the composition into a rectangular shape lined with special baking foil and bake in the preheated oven for about 15 minutes. Remove the worktop from a towel
moistened with cold water and roll it with a towel with everything.

For the vanilla cream, rub the yolks with a pinch of salt and sugar. Add 4-5 tablespoons of milk, flour and rub well to prevent lumps. Then gradually add
the rest of the hot milk and butter, stirring quickly. Bring the composition to a boil and remove from the heat. When it cools, add the vanilla essence and gently incorporate the beaten egg whites.

Slightly unfold the top, grease it with a thin layer of apricot jam, add cold vanilla cream, sprinkle the diced fruit or thin slices, then roll the top with the filling inside. Spread cream on top, sprinkle with coconut flakes and let the roll cool for a few hours before serving.

Ingredients for the fluffy blackberry recipe with jam?

(Tray size 25x35cm)

  • 2 eggs
  • 170g old
  • 300g white flour 000
  • 1 sachet of baking powder
  • 2 tablespoons cocoa tip
  • 100ml oil
  • 200ml water
  • 2 tablespoons sour cream (apricots, plums, cherries)
  • 1 teaspoon free of rum

Preparation for blackberry with jam

Preheat the oven to 170 degrees Celsius.

Mix eggs with a pinch of salt and sugar until it melts and the mixture increases in volume.

Add water, oil, flour mixed with baking powder and cocoa and mix at low speed until smooth.

At the end, add the jam, mix and pour the composition into a tray lined with baking paper and bake for 35 minutes at 170 degrees Celsius.

You can put the jam on top and then mix lightly with a fork.

If you have a gas oven, bake it at the right heat. For more safety, do the toothpick test.

And in the version with jam on top:

When the cake is ready, let it cool, then pour the icing (melt the chocolate together with the oil in the microwave or on a steam bath).

Sprinkle ground walnuts or coconut on top.

Serve sliced ​​blackberry.

We come with the other half of the minced meat, press again very well and wrap with the edges of the bacon left outside.
