  • 2 tablespoons vegetable oil
  • 1 medium onion, minced
  • 1 small mild chili pepper (pimiento), minced
  • 1 clove of garlic, minced
  • 2 (400g) tins kidney beans
  • 180g uncooked rice
  • 500ml water
  • 1 tablespoon adobo seasoning
  • 1 large marrow, halved and seeded
  • cheese for sprinkling
  • Salsa Aji Nativo, or another hot sauce

  1. Heat oil in a pot and fry onion until soft. Add the rest of the ingredients with the exception of marrow, cheese and hot sauce. Cover, reduce heat and simmer until most of the water is absorbed, about 20 minutes.
  2. Preheat oven to 170 C / Gas 3.
  3. Spoon filling into the cavities.
  4. Bake in the oven for 20 minutes then add cheese and a drizzle of hot sauce and bake until the marrow is soft and the cheese is bubbly, about 10 minutes more.

Rice and black beans cook together in this flavorful dish, which gives the rice it’s black color. In addition it’s cooked with peppers, onions, garlic, cumin and bay leaf. Not only is the dish delicious, it’s also high in fiber, protein, anti-oxidants, it’s low fat, vegan, and gluten-free. Win win!!

I grew up surrounded by many Cuban families, in fact as a kid my first “grandma” was Cuban and taught my Mom how to cook so many authentic Cuban dishes, like Picadillo. Arroz congri is another dish I grew up eating, and I make it quite often, especially when I have leftover cooked beans. But canned beans work just fine too!

White rice is typically used in this dish, I’ve never had it with brown rice but I’m sure it would be delicious for those of you who prefer brown – you may have to adjust the liquid and cooking time. You can of course use your own cooked beans from dried beans if you prefer not to used canned. This recipe does not recommend you drain the beans, the liquid is what gives the rice the black color. For those of you who must drain the beans, be sure to fill the can back with water so it won’t be too dry.


Arroz Congri (Cuban Rice and Black Beans)

Arroz Congri is a Cuban black beans and rice dish using canned black beans that can be served as a side dish or meatless main dish.

  • 2 tsp olive oil
  • 1/2 cup chopped green bell pepper , chopped
  • 1/2 cup chopped red bell pepper , chopped
  • small onion , chopped
  • 2 cloves garlic , minced
  • 1 cup uncooked long grain rice
  • 15 oz can black beans , I use Goya (don’t drain)
  • 1 1/2 cups water
  • 1/2 tsp cumin
  • 1 bay leaf
  • pinch oregano
  • salt and pepper to taste

In a heavy medium sized pot, heat oil on medium heat.

Add onions, peppers and garlic and saute until soft, about 4-5 minutes.

Add rice, beans, water, cumin, bay leaf, oregano and salt and pepper. Simmer on medium-low heat, stirring occasionally, until the rice absorbs most of the water and just barely skims the top of the rice.

Cover, reduce heat to low, and simmer 20 minute (don’t peek).

Make sure you have a good seal on your cover, the steam cooks the rice. After 20 minutes, shut flame off and let it sit, covered another 5 minutes (don’t open the lid).

About Cuban cuisine

Cuban Cuisine is based on a fusion of Spanish and Caribbean flavours. Not as spicy as Mexican food, Cuban food is quite special in its combination of sweet and savoury, not unlike Indian food.

Cuban Cuisine features tropical ingredients used in traditional Spanish cooking techniques. Tropical fruits like guava, sugar cane, coconut, papaya, guanabana, mamey, mango and pineapple feature in empanadas, bunuelos, tortillas, and pastelitos. Also, Fish and Pork cooked outdoors (on the beach) is very traditional, so the Cubans love their marinades and pride themselves on barbecue Pork and fish. Yuca, boniato and malanga are root vegetables loved by Cubans, usually served marinated or mashed as a side dish to meat dishes.

The other traditional Cuban side dish is black beans and rice, an extremely nutritious and delicious Cuban specialty. Cuban desserts are sweet and a Cuban bakery is similar to a French patisserie due to its complex collection of Cuban specialties like Tres Leches, Pudin Diplomático and Alfajores (borrowed from Argentinian culture).

Cuban Cuisine has been influenced by many cultures, including, Chinese, African and the French. Most recently American culture has created its own take on Cuban food. In Miami, Cuban food has experienced a renaissance of appreciation and inspiration, resulting in many Cuban inspired restaurants and cafes. From Nouvelle Cuban Cuisine restaurants like Yuca in Coral Gables to traditional cafes like Puerto Sagua Café on Miami Beach, Miami offers many variations on Cuban Cuisine.

In Miami, Colombian, Brazilian, Southern, Argentinean, Honduran and Guatemalan subcultures contribute to the vibrant food scene, and have ultimately influenced Cuban Cuisine. So the Cubans have adopted the hearts of palm for their salads from Coast Rica, Ceviche from Peru, Chimichurri sauce from Argentina, and Callaloo from Jamaica, for examples, to create a vibrant and growing Cuban food culture.

The wonderful thing about Cuban food is that whereas in Miami there is an evolving and ever changing Cuban food scene in Havana, by contrast, the emphasis is on the authentic. Havana boasts a delicious traditional food culture featuring authentic Cuban recipes that have not been altered greatly by other cultures. Rarely do World cuisines evolve as distinctly as Miami and Havana's Cuban food scene. Each culture loves Cuban Cuisine in it own way. It is probably one of the things that Cubans can all agree upon and the more things we can agree upon, the better.


How to Make Frijoles Negros

  • In a pot, place your beans and water. Don’t drain the beans of their juice. Bring to a boil and let simmer.
  • While simmering, add your pepper, garlic, onion, and olive oil to a pan and sauté for about five minutes or until ingredients are translucent. Chop the ingredients finely or use a grater if you prefer not to have them visible in the beans.
  • Add the rest of the ingredients to the pot with the beans including your sautéed mixture.
  • If desired, you can place a bit of the black beans in the sautéed mixture first and mash them up in order for the pepper mixture to mix better with the beans. This helps thicken the consistency.
  • Stir well and allow to simmer for 5-7 minutes on low heat.
  • Add a bit more olive oil right before serving.

Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and liquid has been absorbed, 20 to 25 minutes.

Heat olive oil in a stockpot over medium-high heat saute onion, bell pepper, carrots, celery, and garlic in hot oil until tender, about 5 minutes.

Mix black beans with liquid, chorizo, chicken stock, picante sauce, bay leaves, paprika, red wine vinegar, cumin, sugar, salt, black pepper, and red pepper flakes together in the pot with the onion mixture bring to a boil, reduce heat to medium-low, place a cover on the pot, and simmer until the beans have softened, about 30 minutes.

Remove lid from pot and continue cooking until the mixture reaches your desired consistency, at least 20 minutes more. Remove bay leaves and adjust seasoning to your preferences. Serve over rice.

Congri: How to make Congri Cuban Cuisine Style: Pekis Kitchen

A Congrí exquisite and easy to construct. Ingredients: black beans. Rice. Oil, 1/2 aji, 1/2 onion, 3 cloves of garlic, 1/2 teaspoon of cumin, 1/2 teaspoon oregano, 1 small bay leaf, 1/2 teaspoon of basil. Salt to taste.1/2 teaspoon white pepper. The amount of rice for that Congrí was also as two cups of liquid. In this recipe did he soften the beans that are 1 cup of water by six and i give him 20 minutes in my pressure cooker so that the grain does not soften too. Once past the time you took the steam and separated them from the broth right away to prevent further softening. I make a sofrito. I had two cups of rice in the rice pot. If the broth of the beans does not reach the measure of rice full with dry wine and vinegar, what s teaching at in the rice cooker and added the sofrito and salt. The rice used is jasmine. Once finished the rice, added the beans with a fry garlic for invokes the flavor,stir and presto! Clarified that even though the broth had reached would have used the dry wine and vinegar. I have been asked if this can be done with pre-cooked rice and i would say that in such a case we would have to alter the ingredients of this recipe because this rice takes a lot of fluid and grows fairly, it would be necessary to make an increase of all. The Congris is known by a few with black beans and others with kidney beans, but what is true is that it is a delicious dish and something very, very traditional in the Cuban cuisine.

Arroz con pollo (rice with chicken)

Cuban cuisine is a fusion of native Taino food, Spanish, African, and Caribbean cuisine. Some Cuban recipes share spices and techniques with Spanish and African cooking, with some Caribbean influence in spice and flavor. This results in a unique, interesting and flavorful blend of the several different cultural influences, with strong similarities with the cuisine of the neighboring Dominican Republic and Puerto Rico. A small but noteworthy Chinese influence can also be accounted for, mainly in the Havana area. During colonial times, Cuba was an important port for trade, and many Spaniards who lived there brought their culinary traditions along with them.

As a result of the colonization of Cuba by Spain, one of the main influences on the cuisine is from Spain. Along with Spain, other culinary influences include Africa, from the Africans that were brought to Cuba as slaves, and Dutch, from the French colonists that came to Cuba from Haiti. Another important factor is that Cuba itself is an island, making seafood something that greatly influences Cuban cuisine. Another contributing factor to Cuban cuisine is the fact that Cuba is in a tropical climate. The tropical climate produces fruits and root vegetables that are used in Cuban dishes and meals.

A typical meal would consist of rice and beans, cooked together or apart. When cooked together the recipe is called either “Congri” or “Moros” or “Moros y Cristianos” (black beans and rice). If cooked separately it is called “Arroz con/y Frijoles” (rice with/and beans). A main course (mainly pork or beef) like “Ropa Vieja”, some sort of vianda (not to be confused with the French viande which stands for “meat”, this term encompasses several types of tubers, such as yuca, malanga, and potato all served either hervidas (boiled) or fritas (fried), as well as plantains, unripe bananas and even corn), a salad (usually simply composed of tomato, lettuce and avocado, though cucumber, carrots, cabbage, fermented green beans and radish are not uncommon). Curiously, typical criollo meals largely ignore fruit, except ripe plantains, which are usually consumed together with the rice and beans. Tropical fruit could be served, however, depending on each family’s preferences. Usually, all dishes are brought together to the table at once, except maybe for desserts which typically consists of guava candied in syrup with anise and cinnamon served with a tangy and pungent white Sheep milk cheese.

Rice and beans are a culinary element found throughout Cuba, although it varies by region. In the eastern part of the island, “arroz congri oriental” is the predominant rice and bean dish. White rice and red kidney beans are cooked together with a sofrito and then baked in the oven. The same procedure is used for the above mentioned Congri (also known by the terms Arroz Moro and Moros y Cristianos – literally “Moors and Christians”) which instead uses black beans. Although the process of preparing the black bean soup contains basics (onion, garlic, bay leaf, salt) each region has their tradition of preparing it.

Meat, when available on ration book is usually served in light sauces. The most popular sauce, used to accompany not only roasted pork, but also the viandas, is Mojo or Mojito (not to be confused with the Mojitococktail), made with oil, garlic, onion, spices such as oregano and bitter orange or lime juice. The origin of Cuban mojo comes from the mojo sauces of the Canary Islands. Cuban mojo is made with different ingredients, but the same idea and technique is used from the Canary Islands. Of course with so many Canary Islander immigrants in Cuba, the Canary Islander influence was strong. Ropa vieja is shredded beef dish (usually flank) simmered in tomato-based criollo sauce until it falls apart. Ropa Vieja is the Spanish name meaning “old clothes”, in which the dish gets its name from the shredded meat resembling “old clothes”. Ropa vieja is also from the Canary Islands, as is many of the origins of Cuban food. Boliche is a beef roast, stuffed with chorizo sausage and hard boiled eggs.

Equally popular are tamales, although not exactly similar to its Mexican counterpart. Made with fresh ground corn, Sofrito (tomato,onion,garlic Etc.) and pieces of pork meat, tamales are wrapped in corn leaves and tied, boiled in salted water and served in a number of different ways. Tamales en cazuela is almost the same recipe, although it does not require the lengthy process of packing the tamales in the corn leaves before cooking, but rather is directly cooked in the pot. Tamales as well as black bean soup, are among the few indigenous foods that have remained part of the modern Cuban cuisine.

Stews and soups are common. These are usually consumed along with white rice or gofio (a type of corn flour, also from the Canary Islands), or eaten alone. Corn stew, corn soup (guiso), caldosa (a soup made with a variety of tubers and meats), are popular dishes as well. Also common when available are the popular white bean Spanish stews, such as Caldo gallego (Galician stew), Fabada Asturiana (Asturian Stew) and Cocido de Garbanzos (chickpea stew).

Cuban cuisine uses citrus (i.e. sour orange, lime, lemon), tomato, vinegar, onion, garlic, peppers, white wine or beer (depending on region and dish), raisins and olives/capers to flavor almost every savory dish. This combination of flavor often results in complex flavors with sweet, salty and acidic components. Cuban desserts are known for their sweetness and many desserts use citrus peel, cinnamon and/or anise seed to add distinct flavor. Tropical fruits are often cooked in a sugar syrup with cinnamon and citrus peel and served on white cheese for contrasting flavor or baked in flaky pastries.

Cuban cuisine has developed through the influences of the Cuban exile community in Miami and many traditional Cuban dishes have been readdressed by chefs influenced by nouvelle cuisine and American tastes.

Western Cuba Cuisine

Although Western Cuba’s cooking is technically criollo as well (as this term signifies the existence of Spanish roots), its style can be separated from mainstream criollo, particularly in Havana. This city, for a number of reasons, was more continental and closer to the European cuisine. There’s also a notable Chinese influence, in dishes such as sopa china (an egg and onion soup) and arroz salteado (sauteed rice), among others. Rice is usually consumed separately from beans, and flour is much more commonly used (it is almost completely ignored in mainstream criollo cooking). Some Havana dishes make frequent use ofalcaparrado, a mix of olives, raisins and capers which provide the sweet-and-sour inspired flavor that is typical of this cuisine. Alcaparrado is used as an ingredient in several recipes, usually as part of sauces to accompany meats. It is also cooked together with ground beef to provide the meat stuffing for a variety of Cuban pastries, or finger food, very popular with Cubans.

Other common finger foods and dishes of Havana are pasteles (puff pastry filled with fruit pulps (especially guava), coconut, cream cheese, or ground beef), croquetas (small cylinders of paste, made with a heavy bechamel sauce and ground beef, ham, chicken, fish, or cheese, covered with breadcrumbs and deep fried), papas rellenas (fried potato balls filled with ground beef), picadillo à la Habanera (ground beef with alcaparrado, served with white rice, black beans and fried plantains) and niños envueltos(beef filled with alcaparrado and served in pepper sauce).

Western cuisine also makes wider use of eggs, particularly omelettes (such as tortilla de papa) and fried eggs (huevos à la habanera, fried eggs served over white rice and fried plantains). Fish dishes are also common, especially in coastal areas, and although Cuba has a well-developed lobster fishing industry, it is used very sparsely. Aside from Cuba’s present economic condition, which makes lobster an unreachable food for most families, Cuban cuisine was always of inland origin, therefore fish and sea products are as commonly used as in coastal areas, where crab is another common food staple. Popular fish recipes are enchilado (shrimp, fish, crab or lobster in a sauce that, despite its name, contains no chili), and à la vizcaína, a tomato-based sauce of Basque origin used to cook bacalao (salted cod).

Other Spanish dishes can be found in Cuba, such as the paella, arroz con pollo (chicken cooked with yellow rice much like a paella), and the empanada gallega (which is similar to an English meat pie). Due to heavy Galician and Asturian migration during the early 20th century, many northern Spanish dishes made their way to Cuba and influenced the cooking of many families, like the pulpo à la gallega.

Eastern Cuba Cuisine

While western Cuba is heavily influenced by its European roots, eastern Cuba (the old Oriente province) is influenced by African and Caribbean cuisines. Perhaps the biggest contribution is the Congrí oriental which is cooked red beans and rice. This is due to the close proximity to the other Spanish-speaking islands, where red beans are more prevalent than black beans. Many foods from the Dominican Republic and Puerto Rico can be found in eastern Cuba with their own twists. One example would be the mofongo (called fufú de plátano in Cuba), which is mashed plantains stuffed with pork, chicken, or seafood. The name “fufu” comes from Western Africa.

The majority of sandwiches in Cuba make use of traditional Cuban bread, a long loaf made with lard, instead of oil, and extra moisture, the combination of which lends the bread a distinctive texture.

A Cuban sandwich (sometimes called a “mixto,” especially in Cuba) is a popular lunch item that grew out of the once-open flow of cigar workers between Cuba and Florida (specifically Key West and Ybor City, Tampa) in the late 1800’s and has since spread to other Cuban-American communities.

The sandwich is built on a base of lightly buttered Cuban bread and contains sliced roast pork, thinly sliced Serrano ham, Swiss cheese, dill pickles, and yellow mustard. In Tampa, Genoa salami is traditionally layered in with the other meats, probably due to influence of Italian immigrants who lived side-by-side with Cubans and Spaniards in Ybor City. Tomatoes and lettuce are available additions in many restaurants, but these are considered by traditionalists as an unacceptable Americanization of the sandwich.

After assembly, the Cuban sandwich may be pressed in a grooveless panini-type grill called a “plancha,” which both heats and compresses the contents. It is usually cut in half diagonally before serving.

Other Sandwiches

A medianoche sandwich is very similar to a Cuban sandwich except that Cuban bread is replaced by an egg loaf and ham is sometimes excluded. It received its name (medianoche means “midnight”) from its popularity as a midnight snack in the nightclubs of Havana.

Pan con lechón is a traditional pressed sandwich created simply with Cuban bread, roasted pork, onions, and mojito. Pan con bistec is made in the same fashion, but the pork is replaced with a thin sirloin steak (palomilla).

Another sandwich of Cuba is the “Elena Ruz”. Elena Ruz was a young society debutante in 1930s who would stop at El Carmelo, a popular restaurant and confectionery shop in Havana after an evening at the opera or a social function, and would ask the waiter if he would fix her a sandwich to her orders. It is prepared on white or Cuban bread, with a layer of cream cheese on one slice, a layer of strawberry jam or preserves on the other, and thin slices of turkey breast in between.

Other traditional sandwiches include pan con timba (bread with guayaba paste and cream cheese), pan con chorizo also known as choripán (Cuban bread with thin cut Spanish chorizo sausage), and the frita.

The frita became popular in Cuba in the 1930’s. It is a Cuban version of the American hamburger, although with significant changes. It is prepared with ground beef mixed with ground chorizo. The patties are made small and fried on a griddle. The fried patty is served in a small Cuban bread hamburger bun, topped with onion, tomato, lettuce and shoestring potato sticks.


Cuban Black Beans and Rice with Roasted Peppers and Plantains

A fresh twist on authentic Cuban Black Beans and Rice with baked plantains (tostones), roasted vegetables, and avocado. A healthy, filling all-in-one meal that’s vegan and gluten free!

Yield: 4 servings

Ingredients:

For the Cuban Bean Bowls:

1 cup uncooked brown rice

2 ripe (almost black) very large plantains (about 1 pound), peeled and cut into 1/2-inch-thick diagonal slices

2 large red, yellow, or orange bell peppers (or a mix), cut into 3/4-inch slices and halved

1 small red onion, cut into rough 3/4-inch pieces

2 1/2 tablespoons olive oil, divided

1 1/2 teaspoons kosher salt, divided

3 teaspoons ground cumin, divided

1/2 teaspoon allspice, divided

1 small jalapeño, seeded and finely chopped (about 1 tablespoon)

2 tablespoons tomato paste

2 cloves garlic, minced (about 2 teaspoons)

2 teaspoons dried oregano

3 cups Cuban Black Beans (so good!), or if you are in a hurry, 2 (15-ounce) cans low-sodium black beans, rinsed and drained

Cook rice according to package directions.

While the rice cooks, place racks in the upper and lower thirds of the oven and preheat the oven to 400 degrees F. Line two rimmed baking sheets with parchment paper. Place the plantain slices in the center of one baking sheet and the bell peppers and red onion in the center of the other. Drizzle each baking sheet with 1 tablespoon olive oil and sprinkle each with 1/2 teaspoon salt. Sprinkle 1 teaspoon cumin and 1/4 teaspoon allspice over the plantains. Toss the plantains and vegetables to coat, then spread each into an even layer. Bake in the upper and lower thirds of the oven until the plantains are lightly browned and very tender and the vegetables are caramelized and tender, about 16 to 18 minutes for the plantains and 20 minutes for the vegetables, switching the pans’ position on the upper and lower racks once halfway through.

While the rice, plantains, and vegetables cook, heat the remaining 1/2 tablespoon olive oil in a saucepan over medium heat. Add the jalapeño and cook, stirring often, until tender, about 2 minutes. Stir in the tomato paste, garlic, oregano, and remaining 1/2 teaspoon salt, 2 teaspoons cumin, and 1/4 teaspoon allspice. Cook just until fragrant, about 30 seconds, then stir in the black beans and 1/4 cup water. Cook until the liquid is slightly reduced and the beans are hot, about 2 to 3 minutes. Taste and adjust seasonings as desired.

Divide the cooked rice evenly among 4 bowls. Top each with beans, roasted plantains and vegetables, a big handful each of sliced radishes, avocado, cilantro, and a squeeze of fresh lime.


  • 1 (13.5 ounce) can coconut milk (see note)
  • 2 cups uncooked long or medium grain rice
  • 2 tablespoons to 1/4 cup sugar (or brown sugar)
  • 1 1/2 teaspoons kosher salt
  • 1/2 cup raisins (optional)
  • 3 cups water

Heat coconut milk in a 2 quart heavy-bottomed saucepan over high heat until simmering. Reduce to medium low and cook, stirring frequently with a wooden spoon until reduced to a couple of tablespoons (see note). Continue to cook, stirring and scraping constantly until coconut oil breaks out and coconut solids cook down to a deep, dark brown, about 20 minutes total.

Add rice, sugar (more or less to taste), and salt. Increase heat to medium and cook, stirring constantly until rice grains begin to turn translucent and golden, about 2 minutes. Add raisins (if using) and stir to combine.

Add water and stir to combine. Bring to a simmer over high heat, reduce to lowest possible setting, cover, and cook for 15 minutes. Remove from heat and let rest 15 minutes longer. Fluff with a fork, and serve.
